A
ménage à trois of gooey, drippy, slurpy delight for a cold night on a “bare” skin
rug, in front of the fireplace, with Food
as Foreplay, Recipes for Romance, Love,
and Lust by the Cooking Couple.
Ménage
à Trois Soup Gratiné

T butter
6
cups beef broth
3
large onions, thinly sliced
¼
tsp. freshly ground black pepper
1
cup peeled sliced shallots

½
cup Gruyére cheese, grated
1
tsp. sugar
2
(1-inch thick) slices French bread, toasted
3
cups sliced mushrooms (3/4 pound)

In
a large stockpot melt butter over medium-low heat. Add onions, shallots and sugar. Cover and cook, stirring occasionally, until
onions and shallots are wilted, about 15 minutes.
Add
mushrooms and sauté for 1-2 minutes. Add
beef stock, cover and simmer for 20 minutes.
Preheat
broiler. Ladle soup into oven-proof or
onion soup bowls. Place toasted bread on
top, cover with grated Gruyére cheese.
Place under the broiler and cook until cheese is melted and bubbly.
